cruisingbarb Posted September 23, 2015 #1 Share Posted September 23, 2015 Does anyone have a recipe for the Stilton Blue Cheese mousse with Waldorf salad which a friend enjoyed on an Alaska cruise several years ago. She tried to get it through Princess but they wouldn't share.

cruisingbarb Posted September 23, 2015 Author #4 Share Posted September 23, 2015 She's already tried that. She said it's close but not the same.
lhsail Posted September 24, 2015 #5 Share Posted September 24, 2015 I have a recipe for Waldorf Salad in an older Princess cookbook, but I'm guessing it's the Stilton Mousse that makes it special and I can't help with that.
Roatanfans Posted October 5, 2015 #6 Share Posted October 5, 2015 This is one of my favorites too! If you ever find the recipe let us know! We had it a couple years ago and combined it with the smoked duck breast and it was one of the best things either of us had ever eaten!
cherylandtk Posted October 5, 2015 #7 Share Posted October 5, 2015 (edited) Don't know if this is the recipe, but it is the only one I could find using sour cream in place of the cream cheese found in most recipes. Princess menu says their recipe uses sour cream. I figure the apple celery slaw Waldorf part is pretty generic. Is this close enough? Stilton Mousse 1/2 cup Hellman’s real mayonnaise 1/2 cup sour cream 1 shallot, finely minced 1 cup crumbled Stilton cheese 2 Tbs lemon juice Generous pinch of kosher salt 1 cup whipping cream Put everything except the whipping cream into a food processor. Process gently in pulses until fully combined. You should still see flecks of blue cheese. Take one cup of heavy whipping cream and whip until thick. Take blue cheese mixture out of food processor, and fold into whipping cream. Chill, pipe on crackers. Or, mix into a Waldorf salad?
