DW has some real food allergies and would like to bring some Kind Bars and packages of peanut butter crackers with her each day as we get off the ship in China and Korea. Does anyone know what the rules are on processed, packaged, sealed food coming off the ship?

You won't have any trouble with packaged, sealed foods.

I also have flown into the country many times with packaged food in my bag (and once - accidentally - fruit & a bagel from the plane! Oops :o) I don't have a problem eating in China but from experience I knew there'd be 1 or 2 nights I'd need to just have something in my bag to eat right then. (I was in China for work) No problems.
