You can request someone who is currently, or on the next, sailing on the Regal to personally ask onboard. Just tell the cruiser where you had the sausage. As to brand, you might try Owens or Jimmy Dean. If you can't find it in your store, then it is possible (and easy) to make your own: http://divascancook.com/turkey-breakfast-sausage-patties-recipe/ or are you talking about the links in the casings?
