Reviews of ability for Carnival ships to meet these dietary restrictions is exemplary. Your first step need to be to contact Carnival's special needs group from their website. They will assist you, tell the ship when you are expected and let you know what you must do once on board. Carnival bends over backwards for these things. But it becomes your responsibility to manage that your own dietary needs are met, by following instructions (and various tips from this site). You can't be positive that broth based soups won't have some chicken stock. Or that they haven't used butter, or Worchester sauce. You can get a vegie burger, but it will be cooked on the same grill as the beef burgers. If you are not a strict vegan, then you will have many more choices.
