Time enough to do ship sponsored sting ray city and Rum Tour?

We haven't been to Cayman in almost 30 years. Doing snorkel and stingray city through the ship(OBC) and wondered if there was anyone who had done it and if there was enough time to sneak in a quick Rum tour to 7 fathoms. I'm a bit of a rum collector and don't know when we'll be back. Migh need an extra hour either before(less likely) or after?
