Speciality Dining ~ Romance Package

This may of been answered by another post/thread but there are so many and some are outdated that I wanted to ask fresh. (its also my first cruise)

We'll be taking the Pearl to the Western Caribbean and had a romance package purchased for us as a gift (so wine, roses, etc... and a dinner for 2 at Le Bistro)

My question is how does the Speciality Dining work if you have purchased a package: either the specialty dining (which we are still debating) or a romance package (which we have)

You get appetizers, entree, and dessert. Sometimes you can get multiple appetizers or desserts but limited to one entree. Each. Drinks not included.
