You can have your own bottle in your cabin on HAL. Although some people smuggle their own board - we do not.

 

You can order a bottle through ships services (1-800-541-1576) and have it in your room when you board.

 

Or you can wait and order a bottle through room service when you get on the ship. Or you can go to any bar tender and buy a bottle from them. There will be a 15% gratuity charge added onto the cost of the bottle. And if you are cruising out of Florida and you buy a bottle before you are 10 miles out to sea, another 6% will be added on for Florida tax.
