Just be aware that Disney (along with Universal and Sea World) are a good hour away from the port- without any traffic.

There is a FANTASTIC restaurant at the port called Grills where you can watch Cruise Ships sail away. Great food too!

Yes, KSC and Orlando theme parks are the best known shore trips for visiting cruise ships but many passengers also enjoy nearby active and/or nature excursions. It depends on what you are looking for. How to plan your day also depends on the time you have and when your ship arrives (I assume you are asking about a port-of-call and not a departure?)
