What NOT to Miss on a Private Havana Tour

We are traveling to Cuba next year on the Paradise. We have an overnight in Havana and have to do 7-8 hours of tours that meet the requirements. We have booked a custom full day photo tour with Yosel Vazquez with I Love Cuba Photo Tours. We will be touring Havana via hardtop vintage car and can pretty much customize our itinerary for the day.

 

So my question is - what are the NOT to miss things we should include in the tour? We want to immerse ourselves in the culture as much as possible. We love Cuban cuisine and would also like to experience some of the music culture there. But I'm sure there's much more to see and do. Tell me your must do items and also those that we could/should skip!
