In as much as they have not renamed it Sabatini's Trattoria, I would imagine that it has not transitioned to the new menu. We prefer the older menu, but of course, tastes differ.

In your Cruise Personalizer under 'specialty dining' there should be a link to the current menu on your ship.

 

From what I can recall the latest reports from Crown on here are that the old Sabatini's menu is still in place. The list on the Princess website as to which ships have the new Trattoria menu does not appear to have been updated for a while so I wouldn't go by that.
