See the list linked in the last question on this webpage: http://www.immigration.gov.ky/portal/page/portal/immhome/visitinghere/visas/visitorsvisas/visafaqs I’d contact Cayman’s immigration department directly for the definitive answer since they’re the ones who would say yes or no to you getting off the ship, not the cruise line.
