Excursion Desk

I think they are open on embarkation day BUT we always book online before cruise.  We really don't think the staff at the desk knows the answers to most questions about individual excursions (not their fault, they are on the ship, not out doing the excursions themselves).  A couple of times we have had to change excusions during our cruise (excursion canceled due to weather, port change,  someone sick, etc) and it was very frustrating for us.  The desk people do their best, but really I would rather read online about each excursion and pick myself rather than have the desk staff tell me what excursion is "great".

I do believe they are. Question though, why don't you book prior to sailing?

some tours is only bookable onboard the ship by visiting the desk such as the behind the fun tours

the desk will be open when you board the ship, they usually close around dinner time like around 7pm or so

This is a long tour. They never gave us a minute to use the bathroom!

i have taken the tours on two different ships and they was always a break in the middle of the tour. One break is usually in the middle when they are near the crew mess or the crew HR office.
