They should color the hard boiled eggs that they serve at breakfast for the kids too. I know they have a chapel, it would be nice to have a Mass. I know that Royal Caribbean used to have Catholic services on all Easter and Christmas sailings, but I'm not sure if that is still the case. Unsure about any other Easter-related activities. There is a group called Apostleship of the Sea that places vetted priests on cruise ships.
