Typically what time does self debarkation begin (particularly for the Breeze)

It all really depends on what time the ship actually arrives at the port and is cleared for debarkation.  They will then escort off those who self-debark with priority, followed by calling for self-debarkation by floor.  What time you will be called is anyone's guess.

Also depends on how many diamonds & platinums are onboard.  On our last cruise on the Breeze the theatre was full of D & P's waiting to self-debark (us included).  It was a mess, and took quite some time to get everyone off the ship.  Just stating our experience, Good Luck with yours 😀.
