We were on the Sun a few weeks back for a 3 day.  We showed up at 11:15am, checked in and I was having my first drink before 11:45.  It looked to me that boarding started around 10:30am.  Not sure if that is the norm but it worked out great for us.

Priority boarding starts before 11:00 am. General boarding starts before 11:30. 

 

Buffet and Great Outdoors buffet will open at 11:30 for lunch. Main Dining Room at noon. 

 

Get your cruise started early and get to the port around 10:15 to get through security and check-in before boarding starts.
