Activity reservations open at various times, depending on your Disney Castaway Club level.

 

First time DCL cruisers cannot book things until 75 days out.

 

Many of the onboard activities do have openings once onboard.  Be aware you need to visit Guest Services fairly quickly upon boarding to book those.

 

Port excursions, typically, do not have additional openings.  Some excursions may have a wait list for cancellations, visit the excursions desk to check on that.

 

One other thing, unlike most major cruiselines, DCL does not require payment for those activities/excursions at the time you make the reservation.  So people will book things "just in case".  Penalties apply to those reservations that are not cancelled in a timely manner (3 days prior to ship departure).   Keep an eye on your activities page to see if anything opens up.
