We are thinking about AOS out of Nassau stopping in Cozumel. Will we be able to do excursions there?

Yes, but remember ship excursions are limited because the companies need to ramp up and get going again.  Right now, only 8 are listed for Cozumel.  Honestly, I don't do them.
