Someone on the Canadian board posted about his experiencing cancelling with Carnival for a Casino booking that wasn't supposed to be refundable.  He was able to the full amount moved to another cruise. Not sure about outright cancelling but I'd give them a call.

I was booked for an April Cruise with a casino offer.  I was able email the carnival planner (who is assigned to my account and booked the April cruise) and he moved my non-refundable $400 deposit to a new booking in December. So it is possible to at least kick the can down the road.
