Easier to answer if you indicate NB or SB, ship.  Otherwise, you lesrn nothing other than they use sea days if possible.  We need the itinerary to give you a realistic answer.

You will be able to see which nights are scheduled as formal nights in the Journey View Activities Timeline in the app. Every evening will show either “Casual fun portraits” or “Formal portraits”. I have seen it populate up to 6 weeks before departure

Formal nights aren't always on sea days.  The sea day at the end of a SB Alaska cruise is also the last day of the cruise, and they don't usually have formal nights on the last night since people are packing.

Doesn't matter.  It is the closest day to end of voyage with an early port departure and that isn't the last night.

True on sentence 1.  Never going to have a formal night on first/last night of a voyage.
