Does the cruise line help with finding a roommate? I’d like to cruise to Antarctica but am a solo traveler. The solo difference is so expensive & I don’t mind sharing a cabin. 
Also - it looks like I have to bring my own cold weather gear, except for Wellies. Is that true?

Yes you are just buying a bed in the cabin size you choose (double/triple). The expedition company then matches you with someone of the same gender. 
I've shared with a stranger on 3 out of 4 of my trips. On the 4th one I was lucky and got the whole cabin to myself. 
 

Whoever you are booking with - direct with Antartpply, or via a travel agent, should supply you with a recommended packing list. But yes The boots are supplied - per this advice on the Antartpply website.

I didn't see any reference to a gifted Parka as many other expeditions companies do - but the Ushuaia is one of the last true budget companies so it's likely how they keep costs down. 
I see on their site they have a partnership with a gear rental company - if you don't already own a parka and overpants and won't likely have need for them afterwards.

Depending on the company - I travelled with G-Adventures in February 2020 and they provided boots and you got a comfie parka, but bring along waterproof pants and if you need cloves and a hat...

 

And yes, with many of the small expeditions (Quark, G-Adventures etc) you can book a room to share
