Windows "International" Nights

So we recently took our first Azamara cruise on the Journey back in October.  One thing that I was looking forward to from various CC postings were the "International" nights at the Windows buffet.

 

And, yes, during our 12 night cruise, we did have several international nights.  However, much to my surprise, rather than an international buffet, they converted Windows to a sit-down venue with waiters for the evening.  To me, this was a disappointment - my primary pleasure in a buffet is easily being able to try a little bit of everything, especially on a regionally focused menu.

 

Is this the norm for the international nights, or just an experiment that they were trying out?

As far as I know, the Windows served dinners were instituted for Covid. They had stopped on Onward by early November, and I think buffet service has resumed on all four ships, although the timetable may have been different.

I was on Pursuit in November, Windows buffet was a real buffet every night.  As noted by @uktog in another thread there are differences in how things are done in each ship now.  Also, some "covid protocols" seem to be removed from each ship at different times.

When the ships were taking steps to distance diners due to Covid in the Windows cafe at dinner time, there were “international night” menus that were plated and served.  
Now, the mostly all ships are back to dinner buffets in windows that are themed, like a Greek buffet, an Indian buffet another night, a German themed buffet.etc.

Also, in the Discoveries restaurant, the main dining room, there is usually a course offered that mirrors the theme in Windows for the evening, such as a Greek main dish when the Greek buffet is being served upstairs at Windows.
