No, they used to have them both for breakfast and lunch prior to the pandemic.  They went by the name of Tutti Salad.  However, you can order omelets in the MDR.  When I sailed in September, there was a small omelet station manned by an individual that took your order and delivered to your table.  

 

No omelet station on Oasis.

per other threads, there is an omelet station in Solarium (well technically a place to order omelets).
