Where to make specialty dining reservations on MSC Seaside

Does anyone know where do you go to make specialty dining reservations on MSC Seaside once on the ship??

Likewise for Virtuosa, where would we go on Virtuosa to change MDR dining time on embarkation day (if needed) as well as book a specialty dining slot and carousel slot? Are they all the same place or different?

On Seashore (similar to Seaside), there is a host stand outside of each specialty venue with people taking reservations.  This area was located near the wine bar and another bar (I think on deck 😎 that created sort of a lounge area outside the specialty venues.  I wish I could remember the name of the area but we spent a lot of time there.

Question, do you need to book asap once on board like the Mera? Considering another 4 day on Seaside outside of YC so will do. Speciality dining each night.
