Yes, we went on to Denali and then Fairbanks, so it wasn't an extensive land tour. As we were in Fairbanks in September for 3 nights, we were fortunate to see the Aurora Borealis.

You're right. We planned the trip specifically to spend three nights in Fairbanks, as they say that if you're in Fairbanks for three nights during the season, your odds of seeing them are 80%. The first night we saw the lights, and the next two rain blocked the skies.

On our last cruise it was the last night, which was a sea day. But it can vary.

On a 7-night cruise, there should be two Gala nights. The first is most likely the day after you board, and the second, the night preceding the night before disembarkation. 
This is in general, and can vary depending on which days are sea days.
