As long as it is a 'real' Starbucks (as pictured above), then you can use your app or a card. You earn Stars but cannot redeem them on the ship.  If it is an Atrium Cafe that serves Starbuck products (as on the Jade), then you cannot use a card or app. You would pay using your room key.
