Is it just me or are winter flight prices into and out of Miami  ridiculously expensive? I can fly into/out of Fort Myers and rent a car and drive to Miami for hundreds less per person.

Absolutely, RT prices from NY to FLL in January are starting around $400 plus per person.

Right now, I am looking at $775 per person Jan 26/Feb 4. And if we rent a car and drive from Fort Myers, it would be about $267 per person with the car rental. I am flying from MN.

Sounds like you should fly into Fort Myers.

Also take a look at fares into Orlando.

Orlando International Airport will soon be directly connected with downtown Miami with the BrightLine higher speed trains. Get off the plane and hop on the train.

Might be better than the hassle of renting, returning the rental and then renting again after the cruise.

Check flights into PBI (West Palm Beach).  If you're flying from MSP (Minneapolis), I believe there are non-stop options.  Then you can take either the BrightLine or Tri-Rail to Miami (shuttles to either station).
