If it were me, perhaps in Mykonos just a quick walk around the old town, look for the pink pelican (mascot of the town) and investigate the old windmills. Try some Greek food in town for lunch and then call it a day. In Santorini, for a low-stress day I might be inclined to look for one of the boat tours that sails around the island.
