I agree that they tend to overcook the steaks....and order one step less cooked than normal.

Just disembarked from Valiant Lady today.  We had steak at Pink Agave, Extra Virgin and for brunch at the Wake and found the temperature to be at or even slightly lower than ordered (Medium).  
 

We did have the overcooked experience at the Wake in 2022 on Scarlet so my wife opted for The Hanger Steak this time and it was perfect.

My slight overcook was The Wake in 2024. I just started ordering med rare there rather than my usual medum.  Pink Agave and Extra Virgin were perfect ordered as mediu.

Just got off Valiant Lady in the Med.  Tough call between the filet at The Wake and the Ribeye at Pink Agave.  I declare The Wake filet the winner by the slimmest of margin. 

The final night The Wake was a bit of a mess, they pretty much forgot our order, so we spent 2.5 hours there. So many people showed up without reservations and they tried to accommodate them, I think thats what caused the issues?? Who knows.  Anyhoo the filet was excellent.

Yikes--I order my steak very rare. LOL trying to imagine what a step down is 🙂

That would be blue rare. I'm like you - I like it very rare but warm. Blue rare is slid across the grill and onto a plate. It cool to cold all the way through.
