1st Night Dining w/Late Departure from San Juan

Been on 2 cruises out of San Juan so far and am now booked for our third. Question is, Celebrity did dinner open seating the 1st night instead of having 2 assigned seating times so 2nd seating wouldn't miss sail-away (11pm). However, on Royal Caribbean this year they still did the 2 assigned seatings so we chose to eat at Johnny Rockets that night so we wouldn't miss sailaway (10pm). How does Princess handle this 1st night out of San Juan (11pm departure)?

 

PS we are taking traditional late (2nd) seating vs doing the anytime seating - we like to have the same group of people every night to share our stories with about the day and what we saw/did. Thank you!

It has been several years since I sailed out of San Juan on Princess but when I did they had two seatings but the times were not the usual times - they had been changed to accommodate sail away and muster. Also there were several people missing as they had chosen to grab a bit on deck or on land.
