Been there several times.Lots of shopping.Plenty of places to eat.It thrives on tourists and all is open on Sunday.Best to take a cab or private driver from the port as it is away from Nice.It is a walled town and you can just wander around.Never been from a cruise ship.Do a search on this board using St.paul de Vence as there is quite a bit of infromation on how to get there using the bus and from various ports as well. Everything is open and its a popular destination for many French on Sundays. If you happen to get there pretty early in the morning (by 10) and the weather is good, you might be treated to a treat. Just outside the walls near the main entrance (gate) there is a cafe where the local men will often gather on Sunday mornings for a friendly game of Boules.
