On the 2 Mariner cruises that I have taken, the ship was not at passenger capacity (700). Both were in the 525-550 range.

 

I found this information about the Mariner's restaurant capacity online at: http://www.rssc-uk.com/dining.php?shipId=12

 

Compass Rose Restaurant - Capacity: 518 persons

 

La Veranda Restaurant – Capacity: 226 persons inside, 92 persons outside

 

Signatures Restaurant – Capacity: 100 persons

 

Latitudes Restaurant – Capacity: 82 persons

We've cruised many times on the Voyager and Mariner. The major test of the dining capacity would be on formal nights, especially after the Captain's Reception. Everybody gets done at the same time and heads to dinner. Obviously, some number don't go to the reception, eat in the alternative venues (Signatures, Latitudes or Le Veranda) or dine in their suite, but this night is basically the major test. You'll wait to be seated only the length of time it takes to walk people to their tables. 5 minutes would be unusual. Hint: remember that there is a stern entrance to the Compass Rose and they seat from both ends of the dining room.

 

Since dining is by design leisurely, we've never felt that the kitchen wasn't keeping up. Second hint: ask at the reception desk about galley tours which are not widely advertised but give you some insight on how they pull off their culinary magic each day.
