Changing Currency On Board

I know this has been asked before, but I wanted to make sure I understand the current policy. I'm boarding the Pride next month; can they exchange US dollars for Euros onboard (or whatever the type of currency you need, depending on the islands). I think it's pretty much Euros or US dollars for most islands in the Caribbean, right?

The Purser will exchange $$'s to Euros, but in the Caribbean $$'s are accepted most islands.
