I have a question which I hope someone will be so kind to answer for me. For dining in the Queens Grill, what is the time that one can dine for breakfast, lunch, and dinner? More importantly, is dinner single seating, two seatings, or anytime dining?

Anytime; Breakfast 8:00 - 9:30, Lunch 12:30 - 2:00, Dinner 6:30 - 9:00.

Dinner is anytime between the hours stated by pb82. You did not say what ship you were going to be on. I find the breakfast times vary. When I was on QM2, last April, most days breakfast was 8:30-10:00. Only one day, other than disembarkation day, were they 8:00-9:30. On the QV, during the tandem crossing, again, except for disembarkation day, they were 8:00-9:30 every day. Make sure you get the shirred eggs with caviar!
