You might want to go about 2 days before the end of the cruise, as the lines at the desk start to build after that. Doing that obviously won't cover the charges after that point, but it can tell you if something is being repeatedly mishandled (usually internet or laundry charges which might be free for some passengers but aren't getting reversed out). My husband is always up early and stops by the desk every couple of days or so, and even doing it that frequently, we're amazed at how fast we forget what the charges are, especially since they may not be shown as coming from the same place you purchased them (particularly true for drinks).

 

Also, if you are compulsive as we are, you may have to ask for drink receipts (we just did on the Golden), and insist on it. We were sitting with new friends one night, and they asked for a receipt after getting their drink, and the bar waiter told them they no longer give out receipts (and made some comment about saving trees, which is such a crock, when the vast majority of photos printed on the ship go unpurchased), and I said, "yes, but if a passenger requests one you are supposed to give it to them, and the waiter gave them one.
