Believe it or not, you can also take a boxed Devil's food cake mix, leave out the eggs and oil and anything else they tell you to add, and just add a small can of plain pumpkin..it's delish! sue.young Posted October 30, 2004 Author #7 Share Posted October 30, 2004 I baked them at 350 for 20 to 25 minutes. I also added 1 teaspoon of vanilla. I think they are best eaten the same day. Make your favorite pumpkin pie filling such as 1 can of pumpkin, pumpkin pie seasoning, 1 can evaporated milk, 1 cup sugar (or 1 small can of frozen concentrate apple juice instead of the sugar) 3 eggs. Mix and pour into an oiled 9X13 cake can. Sprinkle a yellow cake mix straight from the box over the pumpkin mix. Top with 1 stick butter or margarine melted. Bake for 45 minutes at 350degrees. I might add some pumpkin pie spice next time. Pumpkin Pecan Streusel Pie makes 2 deep dish pies Filling: 2 (15 oz) cans pumpkin 2 large eggs 2 (14 oz) cans sweetened condensed milk Topping: 1/2 cup packed brown sugar 1/4 cup flour 1/4 cup chopped pecans (I doubled the pecans) 1/4 cup unsalted butter @ room temp 1/2 tsp cinnamon preheat oven to 375. In a large mixing bowl, blend pumpkin, eggs & milk until smooth. Pour into deep dish pie shells. In a small bowl, combine sugar, flour, cinnamon & pecans. Using your fingers, add butter & work in until crumbly & moist. Sprinkle onto pie filling. Place pies on a baking sheet.
