Documents for minors

We're bringing our two children on a cruise with us next year, they will be 3 and 5. Both sets of grandparents are going to be joining us, so we plan on taking advantage of the babysitters while on the trip. My question is whether or not we should come prepared with documentation that allows my parents to take the boys on and off the ship? There is an excursion we would like to do, and my mom has volunteered to take the boys back to the ship early so we can do it. Would their passports and seapass cards be enough, or will my mom need proof that she is their temporary guardian to get them back onboard?

No, you won't need anything special, since you are onn the cruise, too. No questions will be asked at all. It would be different if you weren't sailing at all--she would need something to bring the kids on a cruise, but not for excursions!
