I don't recall seeing anything specifically for diabetics (then again, I wasn't looking...), but by calling ahead of time, they should be able to help you (I think the only thing they can't do are kosher meals)... good luck! I think you will find cruise dining menus to be extremely diabetic friendly. I have found more sugar-free desserts on ships than in any restaurant. I do find it better to try to eat a healthy diet in the dining room than at the buffets but that may just be personal choice. Be sure to take something into port with you to counter-act any low sugar incidents. Also, be aware that most scuba and some snorkel operations will not allow diabetics to participate. While cruising theynever had a hard time finding anything--even in the buffet the desserts are clearly marked sugar free. Let carnival know a few weeks about the diabetes....also on the first night tell your waiter. That way he can inform you if anything that is ordered may be cooked with sugars.
