What to do in Western Caribbean ports?

We're headed to Belize City, Santo Tomas de Castilla and Costa Maya via Holland America in January. What can't be missed? What can be skipped? We don't feel compelled to take tours at every port, like to see something of the local culture as opposed to gift shops and chain restaurants, and prefer independent excusions to the ship's. Anyone have suggestions?

Our favorite private tour was in Belize -- cave tubing. We were picked up at the ship and driven approximately 50 miles. There is walking required (about 1/2 hour). The guide gave a facinating explanation of the history of Belize, amongst many other things (including eating termites that taste, as I recall, like lemon??? We chose not to embibe). The relaxing excursion through pitch black caves was amazing. I would highly recommend this.

Also check out HAL forum....you might find some previous cruisers who took the same cruise (assuming it's not the first time for this itinerary). Have fun!

In Belize we did the river trip up to Lamanai, a group of Mayan ruins. Exceptional.

 

In Guatemala we did a concierge selection trip up to Livingston to meet the Garifuna, and up the river to see the indigenous river dwellers, mostly transplanted by the civil wars. Exceptional. This is also a commonly-booked private trip.

 

Cancun. Avoid the 4x4 trip, it was very disappointing.

 

But they you're on HAL, so you may have different choices.
