anybody know when you can expect to hit warm weather headed to the Caribbean in Jan? Which sea day could we hope to sit out on the deck and be warm?

Unless we are having a cold spell and then you'll have to wait until you're further south. It's been "chilly" down here this winter. Haven't had a/c on in almost 2 months :D
