The ship will cash your U.S. travelers checks and give you U.S. in return. Then you will have to take the cash and go to the exchange machine onboard and convert the U.S. funds there. The exchange rate is usually very poor and you are also charged a fee for the exchange. Much easier to find a different way to get Euros, use an ATM in port, or order Euros from your bank at home and carry them in a money belt on your flight. You'll be losing money twice - once to convert CDN to US and then again US to Euros. Get some before you leave home; or use your ATM once you're in Europe.
