Just book solo. You are charged the same as 2 for the room but the port fees and taxes are just charged just for one. I do it all the time.

1:30 is when the rooms are ready

We have booked the Jubilee for April and it's not showing available yet but I wasn't sure if it was just due to the ship not actually sailing yet.

Usually FTTF is not available the first year of a new ship

the DOUE started for me on Venezia the first day. It may have been after the casino opened though because I hadn't ordered anything before then.

The issue was too many people who never gave them anything.

They can scan your Boarding Pass also as I usually go before room is ready

I go solo to the Steakhouse and the other restaurants alone every cruise.  It isn't really awkward at all.

When buying in port, they are turned into the carnival employee and returned at end of trip

I liked the spa and the TPool - I would take the Cove Spa Balcony

must have changed recently because I used last month and have them booked for Aug 23rd but in any event they are awesome

Not sure if you would be interested in this (like if you want to do things in NYC) but if you come down the NYS Thruway you could book Yankee Trails Cruise Express and just stay in Albany night before.  The bus is $95 pp RT  and takes you to the pier and picks you up there at end of the cruise. You can park during the cruise at their office in Rensselaer for free. Just an option for you

Being Platinum or Diamond makes no difference - higher rollers get the earliest date
