We, too, eat pescatarian with no shell fish. We have never had a problem. There has been (although some have reported they can't get it) a separate vegetarian menu, at least seven different ones. Ask your waiter for it. If he says no, ask the maitre d'. Also, if you ask, they will show you the next night's menu and will make something off menu for you (one day notice).
We have had pasta alfredo with fresh mushrooms, chinese style sweet and sour fish, vegetarian baked onion soup, among other dishes.

My 1A balcony on the Eclipse for January 2015 has gone up $940 pp. since I booked it a year ago and some categories are sold out.

Plan to dress in layers. The temperature varies a lot during the day, as well as from day to day. You should have rain wear although you may be lucky and not need it.

Yes.. board in one terminal disembark next door.
Not sure about Equinox but Eclipse moved from FLL to MIA, perhaps for this reason.
Equinox does not have that problem. It has always docked at Terminal 18 (the Oasis and Allure terminal), since it is not in FLLL on weekends.

You can usually get something special made if you ask the night before.

All of the balcony cabins on the S class ships are the same size, including concierge and Aqua. You get daily hors d'oevres (or better a cheese plate) and more points in their reward system. We have done all three categories and would not spend more than $100 pp for Concierge unless it was a much better location.

We were told that they no longer provide wheel chair assistance at disembarkation on the Century in San Diego.
Of course, they did.

We sailed the Equinox in 8230 and booked it again for the Eclipse next winter. It is on the center hump facing forward - the furthest one out.
We loved it.:)

They run all night at a reduced schedule.

It is one dining room with three levels, open in the middle.
Breakfast and lunch are usually served on one of the levels. The daily program will tell you which. MDR is only open for lunch on sea days.
More complimentary options including Windjammer Café, Jade Sushi and Asian-fusion cuisine, Sorrento's Pizza, Café Promenade for coffee and pastries/snacks, and room service (from RCI web site).

The first formal night will almost certainly be on day 2. If you only want to do one, that would be it.
The second will likely be Hubbard Glacier; they don't usually do formal on an evening when they are still in port and they don't do it on the last night.

I would choose 7211 for the larger balcony.

It's about $15 including tip for as many as fit in the taxi.

We liked 8230 on the Equinox (which is forward facing) and have booked it again for a cruise on the Eclipse. We had no wind problems. Since it is the outmost balcony, it is larger than the one ahead of us and you can look back by sticking your head over the railing.

There are two advantages to the Southwest plan besides the one hour. First, you are changing planes in Tampa, which will not be snowed or iced in. Second, if the second leg is cancelled, you can rent a car and drive to the port. A third one, if you are going to cancel at the last minute, you can use the Delta as a backup if the Southwest is badly delayed on the first leg.

I just finally got through to Celebrity after 20 minutes on hold and was told that I could cash one personal check up to $200 on any of their three brands-Celebrity, Royal Caribbean or Azamara. We will be going on Liberty of the Seas followed by Celebrity Century next week. This should be plenty cash to cover us in the ports.
That has always been the policy, although it have changed. The limit was $250 if you had an American Express card.

Also, on S class ships, the rooms that hold more than two people always have the beds by the door. It's usually easier to count from there.

The non-refundable (from -X-) is always used first. We had some of both on our last cruise, used most of it, and the balance was credited to my charge card within a day or two.

We have done all three of your proposed cruises and enjoyed each of them.
10 days on the Equinox beat 8 or 7 days.
If you liked all the activities on the Oasis, the Allure has them all, a little less on the Independence and much less on the Equinox.
If I had those choices, I would choose the Equinox for better food, better service and a more relaxed atmosphere.
