I don't understand this surely you choose the number of the cabin when you are making the reservation or am I missing something here?

kind regards

Yes, you're missing the practice of booking a "guarantee", rather than an actual cabin that you've chosen. This is a cheaper way to book a cabin. A person can ask to be assigned a cabin in a particular category of cabin, and in doing so, will be "guaranteed" at least a cabin in that category, but often will be upgraded to something better, at the cheaper cabin price.

Yes that is what we are doing (at the advice of our elite Cruise travel agent) Guess that results in delay in room assignment, which makes sense.

Our travel agent is really good about letting us know when our cabin assignment has been made. Lately, we've received them a few weeks after the final payment date on our two most recent Princess cruise.

When we sailed on Holland America last spring, we found out about two weeks before sailing. Some folks in our Cruise Critic party did not find out until getting to the pier. That was a sold-out ship, and HAL was offering incentives to some people to get them to cancel. I'm sure there was a lot of last-minute reshuffling of cabin assignments.
