Your best and quickest way of finding LOTS of recommendations is to do a search under each Ports area. Use the name of the stop and tour guide. i.e. "Rhodes tour guide". You should come up with a good list.

For Istanbul, without a doubt use Kagan Kosagan from privatetoursinturkey.com. You will find many great reviews of him on the boards.

 

We just used him for our Ephesus/Kusadasi tour and would recommend him 100%. We absolutely loved him and our tour in a very large comfortable bus. You will not be disappointed.

 

Santorini is very easy to do on your own. Check out the Greece boards for lots of information. Easy to rent a car or jeep, you cant get lost!

I used Dennis with http://www.toursofathens.com. He is very professional and has a comfortable vehicle. Very easy to understand and was extremely capable in getting us around the city quickly and safely.

Please be aware that people cannot say one operator is the best unless they have tried them all. For Ephesus there are several companies that have good reviews, including Ekol, Hello Ephesus and Ephesus Deluxe.
