One dining room will be dedicated to traditional dining and the other for anytime dining. Traditional dining is assigned on a first come-first serve basis. However if the Bordeaux is full sometimes the maitre d' takes diners upstairs to the Provence. That's the only time decision making by the cruise staff comes into play. The OP will be going to the Provence dining room on deck 6 as that is the dining room for Traditional diners.
