Oh, good question: I have done both, I can tell (based on my experiences):

COSTA:

Good:

-nice staff

-good service

-clean, modern

-not too noisy, but lively

-good food

-not too much passengers

.good cabin

Not good:

-our cabin steward

MSC:

Good:

-clean, modern

-good cabin

-good service

Not good:

-more noisy than Costa or Princess

-too much animation

-more passengers --> less space

Coclusion: MSC is good, but Costa is better nearly everywhere!

Another advantage for Costa- you won't have Grumpy100 on board!

But speaking seriously, I've been on Celebrity- I wouldn't say they really did anything much better than Costa. The nightlife simply was no comparison- Celebrity was pretty gawdawful, almost as bad as Holland America.

In my experience, the cabin stewards on Costa have been on average better than any other line I've been on.

Some of the MSC staff (land as well as on board) has a 'I don't care attitude' that can really get up your sleeves...

Costa's are much more in line with what one would call service

I have been on Costa and one evening, there have been a special buffet - it was prepared (probably for midnight).

And Costa has the pizzabuffet, I forgot whether MSC had it as well.

But all in all Costa has better itineraries! The main problem of MSC: too short port timings!

Next year I will enjoy Costa!! ;) :D

On my last 3 cruises there have been speciality buffets every night at around 11.30 ish...usually out on the pool deck but if the weather played up it was heald in one of the MDR's or lounges instead...and they were always very well received by the pax.

Costa Victoria, this year, was brilliant with late night buffets...amazing selections every night for the entire 21 night cruise :)
