Sometimes when you book in advance you catch a price before it goes up. Prices are the same otherwise. I usually have some OBC I want to apply so I always wait to book until I board. Some ships have the red kiosks near the excursion desk. I didnt know until someone explained it to me either just last January, you can book yourself with them. Of course, you can't do that until you get your cabin so going to the shore excursions desk as soon as you board may be the best option if you're concerned about an excursion filling up.
