Dining on departure night ?

We have been on many cruises out of San Juan but have never had to be on the ship by 7:00 pm. How do they handle dinner that night. We generally have open seating that night but were wondering if it changes with the early sailing.

they don't really adjust the dining hours. Some people stay on shore until later than normal, but most are on board for the usual seatings. Sometimes they have open seating for all diners, but sometimes they do the usual assigned dinings. I think that the ship has a handle on how many people will be arriving late, and how many are likely to be on board and ready for their assigned dining times so it does change from cruise to cruise whether or not that first night is open seating for all.
