Thanks for the great and extensive review. We sailed on the Solstice in the fall of 2009 and are booked to do the Adriatic in October 2013. Have sailed with NCL and Princess in between. Although we had great times on all 3 of these cruises, our hearts are really with Celebrity and so we are really looking forward to the next one. I am copying your review ( text) so that we will be able to take advantage of all you mentioned.

There is real sushi! Sushi chefs stand there and make it fresh and then put it out. Of course, there are also California Rolls for us lightweights :)
