Specialty Dining - how does it work?

I'm going on my FIRST cruise on the Celebrity Summit and am wondering how the Specialty dining restaurants work.

 

The Celebrity site has the menu posted. For example for the SS Normandie restaurant, under each course, there are a number of options. Do you get to go and choose one option from each course?

Yes, you do. There's also a tasting menu with wine pairing option (for a higher price), where you get all the courses that are listed on the special tasting menu, along with wines paired to each course.

actually in the MDR you can order as many of each course as you want. or skip a course.

 

double dessert is always fun.

 

in the specialty restaurants you may have issues getting a second entree but otherwise agaiun you can order as much as you want.

I have ordered more. I like a salad with my dinner and occassionally order another appetizer. Never experienced a problem.
